Carrot Cake
Ingredients
3 eggs
¾ c buttermilk
¾ c vegetable oil
1 ½ c white sugar
2 t vanilla
2 t cinnamon
¼ t salt
2 c all-purpose flour
2 t baking soda
3 c shredded carrots
1 c chopped walnuts
1 - 8oz can crushed pineapple (with juice)
1 c golden raisins (steamed in OJ, add 1 T Coconut Rum, let set and drain before adding)
Directions

Place raisins, orange juice in a small kettle and gently heat to plump raisins (about 5 minutes), add rum and let set until cool. Drain raisins before adding to mix.

Pre-Heat oven to 350 degrees. Grease and flour pans or use Parchment paper.

Sift together dry ingredients and set aside.

Combine Eggs, Buttermilk, Oil, Sugar and Vanilla. Mix well.

Add Flour mixture and mix well.

In a separate bowl combine carrots, nuts, pineapple and raisins.

Pour batter over the carrot mixture and fold in together.

Place batter in prepared pans and bake at 350 degrees for 1 hour. Check with a toothpick.

Allow to cool before frosting.
Notes
Top with cream cheese frosting.
